Chef Tom Wilkinson, shaped by over two decades of culinary expertise, blends both traditional and unconventional influences. Largely self-taught, he attributes his culinary journey to his mother's lessons and his diverse experiences, from busboy to General Manager. With a keen interest in Southern American and traditional Spanish cuisine, his work reflects a profound love for the flavors, culture, and techniques of Spain and the Mediterranean. Chef Tom, transcending borders in his creations, sees food as a language, aiming to speak with clarity and honesty, weaving new stories onto your plate.

Alejandro Ocanto Uzcategui


Chef Alejandro Ocanto Uzcategui hails from Caracas, Venezuela and brings with him a rich appreciation for exceptional cuisine. Influenced by home cooking, international travels, and diverse culinary traditions, his palate was cultivated early on. Discovering his true passion for cooking during hospitality management studies, Chef Alejandro pursued his calling. With internships and work experiences across Peru, Bolivia, Germany, Spain, and the US under the guidance of esteemed chefs, including Michelin-recognized and St. Pellegrino-ranked mentors, he sees food as a genuine art and a multisensory experience. Chef Alejandro finds joy in every aspect of the culinary journey, from sourcing ingredients to witnessing others savor his creations, considering it both a privilege and a humbling expression of self.

In show of his steadfast commitment to the arts, he passionately supports both local talents and international artists, recognizing the profound impact of culture on the soul. Transitioning from a successful corporate background, he embarked on a transformative journey into luxury hospitality, driven by a passion for crafting immersive and exceptional experiences. At Debonair Supper Club, Ovais has sculpted a place that goes beyond simply dining to create a haven where innovation, community, and a dedication to the arts converge.
